Cheesy Turkey and Broccoli Casserole

2 cups cooked turkey, shredded or diced

3 cups broccoli florets, steamed

2 cups cooked quinoa or rice (for a gluten-free option)

1 cup sharp cheddar cheese, shredded

1 cup cream of mushroom soup (or homemade equivalent)

1 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

1/2 cup breadcrumbs (optional, for a crunchy topping)

2 tablespoons olive oil (if using breadcrumbs)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large mixing bowl, combine the cooked turkey, steamed broccoli, cooked quinoa (or rice), half of the cheddar cheese, cream of mushroom soup, milk, garlic powder, onion powder, paprika, salt, and pepper. Mix until everything is well combined.

      Transfer the mixture to a greased 9x13 inch casserole dish, spreading it evenly.

        Sprinkle the remaining cheddar cheese evenly over the top of the casserole.

          If using breadcrumbs, mix them with olive oil in a small bowl until they are evenly coated. Then sprinkle the breadcrumb mixture over the cheese layer.

            Cover the casserole with aluminum foil to prevent it from browning too quickly and place it in the preheated oven.

              Bake for 25 minutes, then remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and the breadcrumbs (if using) are golden brown.

                Remove from the oven and let it sit for 5 minutes before serving. Garnish with fresh parsley for a pop of color.
