Cheesy Spinach and Turkey Stuffed Shells

20 jumbo pasta shells

1 lb ground turkey

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup mozzarella cheese, shredded (plus extra for topping)

½ cup Parmesan cheese, grated

1 egg

2 cloves garlic, minced

1 tsp Italian seasoning

Salt and pepper to taste

2 cups marinara sauce

Fresh basil leaves for garnish (optional)

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Boil the Pasta: In a large pot of boiling salted water, cook the jumbo pasta shells according to package instructions until al dente. Drain and set aside to cool slightly.

      Cook the Turkey: In a large skillet over medium heat, add the ground turkey. Cook until browned, about 5-7 minutes, breaking it apart as it cooks.

        Add Aromatics and Spinach: Add minced garlic and chopped spinach to the skillet with the turkey. Stir and cook for an additional 2-3 minutes, until the spinach is wilted. Season with Italian seasoning, salt, and pepper. Remove from heat.

          Prepare the Filling: In a large mixing bowl, combine the cooked turkey and spinach mixture with ricotta cheese, mozzarella cheese, Parmesan cheese, and the egg. Stir everything together until well mixed.

            Stuff the Shells: Spread ½ cup of marinara sauce evenly across the bottom of a 9x13 inch baking dish. Take each cooled jumbo shell, fill it generously with the turkey and spinach mixture, and place it seam-side up in the baking dish.

              Top with Sauce and Cheese: Once all shells are stuffed, pour the remaining marinara sauce over the shells. Sprinkle additional shredded mozzarella cheese on top for added cheesiness.
