Cheesy Spinach and Egg Breakfast Wraps

4 large eggs

2 cups fresh spinach, chopped

1/2 cup shredded cheese (cheddar, mozzarella, or a blend)

4 whole wheat tortillas (8-inch)

1/4 cup milk (or plant-based milk)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper, to taste

2 tablespoons olive oil (or cooking spray)

Optional: 1/4 cup diced tomatoes or avocado for garnish

Instructions
 

Prepare the Eggs: In a medium mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper until thoroughly combined.

    Sauté the Spinach: Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Add the chopped spinach and sauté for about 2-3 minutes, until wilted. Remove the spinach from the skillet and set aside.

      Cook the Eggs: In the same skillet, add another tablespoon of olive oil if needed. Pour in the egg mixture and cook gently, stirring occasionally until the eggs are almost set (still slightly runny).

        Add Spinach and Cheese: Fold in the sautéed spinach and shredded cheese to the eggs, continuing to cook until the eggs are fully set and the cheese has melted. Remove from heat.

          Assemble the Wraps: Lay a tortilla flat on a clean surface. Spoon a generous portion of the egg and spinach mixture onto the center of the tortilla. Fold the sides over the filling, then roll from the bottom up tightly to form a wrap. Repeat with the remaining tortillas.

            Optional Toasting: For a crispy finish, heat the skillet again, and lightly toast each wrap for about 1-2 minutes per side until golden brown.
