Cheesy Spinach and Chicken Quesadillas

2 cups cooked chicken, shredded or diced

2 cups fresh spinach, chopped

1 cup shredded mozzarella cheese

1 cup shredded cheddar cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon chili powder (optional for heat)

8 small flour tortillas

2 tablespoons olive oil (or butter)

Salt and pepper to taste

Sour cream and salsa, for serving

Instructions
 

Prepare the Filling: In a large mixing bowl, combine the shredded chicken, chopped spinach, mozzarella cheese, cheddar cheese, garlic powder, onion powder, chili powder (if using), and a pinch of salt and pepper. Mix well until all ingredients are combined.

    Heat the Tortillas: In a large skillet over medium heat, add 1 tablespoon of olive oil. Place a tortilla in the skillet and allow it to warm for about 30 seconds, until pliable. Remove from the skillet and set aside. Repeat with the remaining tortillas.

      Assemble the Quesadillas: Place one warmed tortilla back in the skillet. Add a generous portion of the chicken and spinach filling on one half of the tortilla. Fold the other half over to create a half-moon shape.

        Cook the Quesadillas: Cook for about 2-3 minutes on one side until golden brown and the cheese begins to melt. Carefully flip the quesadilla and cook for another 2-3 minutes on the other side. Once both sides are crispy and golden, remove from the skillet and set aside. Repeat with remaining tortillas and filling.

          Slice and Serve: Cut each quesadilla into wedges and serve warm with sour cream and salsa on the side.
