Ingredients

1 lb ground turkey

1 cup uncooked pasta (your choice, like penne or rotini)

1 cup ranch dressing

1 cup shredded cheddar cheese (plus extra for topping)

1/2 cup cream cheese (softened)

1 cup diced broccoli florets (fresh or frozen)

1/2 cup diced onion

2 cloves garlic (minced)

1 tsp paprika

1/2 tsp salt

1/4 tsp black pepper

1/2 cup milk

1/2 cup crushed tortilla chips (for topping)

Fresh parsley (for garnish)

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

Cook the Ground Turkey: In a large skillet over medium heat, add ground turkey and cook until browned, about 5-7 minutes. Break it apart with a spatula while cooking. Drain any excess fat.

Sauté Onions and Garlic: Add the diced onion and minced garlic to the skillet with the turkey. Sauté for an additional 2-3 minutes until the onion is translucent.

Incorporate Broccoli: Stir in the diced broccoli. Cook for about 3-4 minutes until just tender.

Make the Sauce: In a bowl, mix the ranch dressing, softened cream cheese, milk, paprika, salt, and pepper until well blended. Pour this mixture into the skillet with the turkey and veggies. Stir to combine.

Combine Pasta and Cheese: Add the cooked pasta and 1 cup of shredded cheddar cheese to the skillet. Stir everything together until the pasta is well-coated in the sauce.

Transfer to Baking Dish: Preheat your oven to 350°F (175°C). Transfer the mixture into a greased 9x13-inch baking dish.

Add Toppings: Sprinkle additional cheddar cheese and crushed tortilla chips evenly over the top of the casserole.

Bake: Place the casserole in the preheated oven and bake for 20–25 minutes, or until the cheese is bubbly and golden.

Garnish and Serve: Once baked, remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving. Enjoy your hearty and cheesy meal!
