1 lb (450g) ground beef

1 cup long-grain white rice

2 cups beef broth

1 medium onion, diced

1 bell pepper, diced (any color)

3 cloves garlic, minced

1 can (15 oz) diced tomatoes, undrained

1 tablespoon tomato paste

1 teaspoon chili powder

1 teaspoon cumin

Salt and pepper to taste

1 cup shredded cheddar cheese

1 tablespoon olive oil

Fresh cilantro or green onions for garnish (optional)

Heat the Olive Oil: In a large skillet, heat the olive oil over medium heat. Once hot, add the diced onion and bell pepper. Sauté for about 3-4 minutes until they begin to soften.

    Cook the Ground Beef: Add the ground beef to the skillet. Cook, stirring occasionally, until browned and fully cooked, about 5-7 minutes. Drain any excess fat.

      Add Garlic and Spices: Stir in the minced garlic, chili powder, cumin, salt, and pepper. Cook for an additional 1-2 minutes until fragrant.

        Incorporate Rice and Liquids: Add the long-grain white rice to the skillet, mixing it well with the beef and vegetables. Pour in the beef broth, diced tomatoes (with juices), and tomato paste. Stir everything together.

          Simmer: Bring the mixture to a gentle boil. Once boiling, reduce the heat to low, cover the skillet, and let it simmer for about 20-25 minutes, or until the rice is cooked and has absorbed most of the liquid.
