2 cups elbow macaroni

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

2 cups whole milk

2 cups shredded sharp cheddar cheese

1 cup shredded pepper jack cheese

1-2 teaspoons ghost pepper sauce (adjust to taste)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup panko breadcrumbs

2 tablespoons olive oil

2 tablespoons chopped fresh parsley (for garnish)

Instructions
 

Cook the Macaroni: Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce: In a large saucepan over medium heat, melt the butter. Once melted, whisk in the flour to create a roux. Cook for about 1-2 minutes until it’s a light golden color.

      Add the Milk: Slowly pour in the milk while whisking continuously to avoid lumps. Continue to cook, whisking frequently, until the mixture thickens (about 5-7 minutes).

        Incorporate the Cheeses: Reduce the heat to low and add in the shredded cheddar and pepper jack cheese, stirring until melted and smooth. Stir in the ghost pepper sauce, garlic powder, onion powder, salt, and black pepper. Taste and adjust seasoning or add more ghost pepper sauce to your desired heat level.

          Combine Pasta and Sauce: Fold the cooked macaroni into the cheese sauce until well coated.

            Prepare Topping Mixture: In a small bowl, combine the panko breadcrumbs and olive oil. Mix until the breadcrumbs are evenly coated with oil.
