Cheesy Chicken and Broccoli Rice Casserole

2 cups cooked, shredded chicken (rotisserie chicken works well)

3 cups fresh or frozen broccoli florets

1 cup shredded cheddar cheese

1 cup creamy mushroom or chicken soup (canned or homemade)

1/2 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon black pepper

1/2 teaspoon salt (adjust to taste)

1 teaspoon dried thyme (optional)

1/2 cup breadcrumbs (for topping)

2 tablespoons melted butter (for breadcrumbs)

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Start by preheating your oven to 350°F (175°C).

    Prepare the Broccoli: If using fresh broccoli, steam it until tender but still bright green, about 3-5 minutes. For frozen broccoli, simply thaw and drain excess moisture.

      Mix the Base: In a large mixing bowl, combine the cooked rice, shredded chicken, broccoli, and garlic powder, onion powder, black pepper, salt, thyme (if using), and the creamy mushroom or chicken soup. Stir until well combined.

        Add Milk and Cheese: Pour in the milk and half of the shredded cheddar cheese, mixing everything evenly.

          Transfer to Casserole Dish: Grease a 9x13 inch baking dish with cooking spray or a little bit of butter. Pour the mixture into the dish, spreading it out evenly.

            Prepare the Topping: In a small bowl, mix the breadcrumbs with the melted butter until the breadcrumbs are evenly coated. Sprinkle the buttered breadcrumbs over the top of the casserole. Finish by adding the remaining cheddar cheese on top.
