1 lb ground beef

1 cup uncooked brown rice

2 cups beef broth

2 cups broccoli florets (fresh or frozen)

1 small onion, chopped

2 cloves garlic, minced

1 tsp onion powder

1 tsp garlic powder

1 tsp paprika

1/2 tsp black pepper

1 cup shredded cheddar cheese (plus extra for topping)

1 cup sour cream

1/4 cup milk

1/4 cup grated Parmesan cheese

Salt to taste

Olive oil for cooking

Fresh parsley for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C).

    Sautéing the Beef: In a large skillet over medium heat, heat a drizzle of olive oil. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent (about 3-4 minutes).

      Brown the Ground Beef: Add the ground beef to the skillet, breaking it up with a spatula. Cook until browned and cooked through, seasoning with onion powder, garlic powder, paprika, black pepper, and salt. Once done, drain any excess fat if necessary.

        Cooking the Rice: In a separate pot, combine the uncooked brown rice and beef broth. Bring to a boil, then reduce heat, cover, and let it simmer for about 30 minutes, or until the rice is tender and has absorbed the liquid.

          Mixing Ingredients: In a large bowl, combine the cooked beef mixture, cooked rice, broccoli florets, shredded cheddar cheese, sour cream, milk, and grated Parmesan cheese. Stir well until all ingredients are incorporated.

            Assembling the Casserole: Transfer the mixture into a greased 9x13 inch casserole dish. Spread it out evenly and top with an additional 1/2 cup of shredded cheddar cheese for a cheesy crust.

              Bake: Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Then, remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and slightly golden.

                Garnish and Serve: Once done, remove from the oven and let it cool for a few minutes. Garnish with chopped fresh parsley if desired. Serve warm and enjoy!
