1 cup quinoa, rinsed

2 cups beef broth or water

1 lb ground beef (lean)

2 cups fresh broccoli florets

1 cup shredded cheddar cheese (plus extra for topping)

1 cup cream cheese, softened

1/2 cup sour cream

1 tablespoon olive oil

1 small onion, diced

2 garlic cloves, minced

1 teaspoon paprika

1 teaspoon dried Italian seasoning

Salt and pepper, to taste

Optional garnish: chopped fresh parsley

Cook the Quinoa: In a medium-sized pot, combine the rinsed quinoa with the beef broth (or water) and bring to a boil. Once boiling, reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and all the liquid is absorbed. Remove from heat and set aside.

    Prepare the Beef Mixture: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 2-3 minutes until soft. Add the minced garlic and cook for another minute. Then, add the ground beef, paprika, Italian seasoning, salt, and pepper. Cook until the beef is browned and fully cooked through. Drain any excess fat.

      Blanch the Broccoli: While the beef is cooking, bring a small pot of salted water to a boil. Add the broccoli florets and blanch for 2-3 minutes. Drain and immediately transfer to a bowl of ice water to stop the cooking process. Once cooled, drain again and set aside.

        Combine Ingredients: In a large mixing bowl, combine the cooked quinoa, beef mixture, blanched broccoli, cream cheese, sour cream, and 1 cup of shredded cheddar cheese. Stir until everything is well mixed and the cheeses are evenly distributed.

          Assemble the Bake: Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking dish with cooking spray or butter. Pour the quinoa mixture into the dish and spread it out evenly. Top with additional shredded cheddar cheese for an extra cheesy crust.

            Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until the cheese is melted and bubbly.
