2 cups cooked penne pasta

1 cup cherry tomatoes, halved

1 medium zucchini, diced

1 red bell pepper, diced

1 cup fresh spinach, roughly chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

1/4 cup balsamic vinegar

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried Italian herbs (oregano, basil, thyme)

Salt and pepper to taste

Fresh basil for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Veggies: In a large bowl, combine the cherry tomatoes, zucchini, red bell pepper, and spinach. Drizzle with olive oil, add minced garlic, Italian herbs, salt, and pepper. Toss to coat evenly.

      Combine Pasta and Veggies: In the same bowl, add the cooked penne pasta and mix well with the vegetables. Pour in the balsamic vinegar and stir until everything is well combined.

        Add Cheeses: Add the ricotta cheese and half of the mozzarella, mixing until the pasta and veggies are coated with the cheese.

          Layer the Casserole: Transfer the mixture into a greased 9x13 inch casserole dish. Sprinkle the remaining mozzarella and the grated Parmesan cheese evenly over the top.

            Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbly and golden brown.

              Garnish and Serve: Once done, remove from the oven and let it cool for about 5 minutes. Garnish with fresh basil if desired before serving.
