2 cups fresh spinach, chopped

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/4 cup milk

1/2 teaspoon garlic powder

1/4 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil

1/2 teaspoon red pepper flakes (optional)

Fresh herbs (like parsley or chives) for garnish

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare Spinach: In a medium skillet, heat the olive oil over medium heat. Add the chopped spinach and sauté for about 2-3 minutes, or until wilted. Remove from heat and let cool slightly.

      Mix Ingredients: In a large bowl, whisk together the eggs, milk, garlic powder, salt, black pepper, and red pepper flakes (if using). Stir in the sautéed spinach and both cheeses until well combined.

        Prepare Muffin Tin: Lightly grease a standard muffin tin with cooking spray or olive oil to prevent sticking.

          Create Nests: Using a ladle or measuring cup, divide the egg and spinach mixture evenly among the muffin cups, filling each about 3/4 full.

            Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the egg is set and the tops are slightly golden.

              Cool and Serve: Allow the nests to cool in the muffin tin for about 5 minutes. Then gently run a knife around the edges to release them. Carefully remove each nest and transfer them to a serving platter.
