Ingredients

2 cups cooked chicken, shredded or diced

1 large bag tortilla chips (about 10-12 ounces)

2 cups shredded Monterey Jack cheese

1 cup shredded cheddar cheese

1 cup black beans, drained and rinsed

1 cup corn (canned or frozen)

1 cup diced tomatoes (fresh or canned)

1/2 cup sliced jalapeños (fresh or pickled)

1 avocado, diced

1/4 cup fresh cilantro, chopped

1/2 cup sour cream

Juice of 1 lime

Salt and pepper, to taste

Cooking spray (for greasing the baking dish)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Baking Dish: Lightly grease a large baking sheet or a 9x13 inch baking dish with cooking spray to prevent sticking.

Layer the Chips: Spread a single layer of tortilla chips evenly across the bottom of the prepared baking dish.

Add Chicken and Beans: Evenly distribute the shredded chicken and black beans over the tortilla chips, ensuring each chip has some topping.

Add Corn and Tomatoes: Sprinkle the corn and diced tomatoes over the chicken layer.

Cheese It Up: Generously sprinkle both the Monterey Jack and cheddar cheese over the entire dish, covering as much as possible.

Top with Jalapeños: Add the sliced jalapeños for a spicy kick, spreading them out evenly across the nachos.

Bake: Place the baking dish in the preheated oven and bake for about 15-20 minutes, or until the cheese is melted and bubbly.

Prepare the Avocado Lime Sour Cream: While the nachos are baking, mix the sour cream with lime juice in a small bowl. Add a pinch of salt and pepper, and stir until combined.

Garnish: Once the nachos are out of the oven, sprinkle diced avocado and fresh cilantro over the top for a fresh finish.

Serve: Serve immediately with the avocado lime sour cream on the side for dipping!
