1 cup shredded sharp cheddar cheese

3/4 cup buttermilk

1 pound ground beef (or ground turkey for a lighter option)

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

1 medium onion, chopped

2 cloves garlic, minced

2 tablespoons chili powder

1 teaspoon cumin

Salt and pepper to taste

1 tablespoon olive oil

For Assembly:

Extra cheddar cheese slices (optional)

Fresh cilantro, chopped (for garnish)

Sliced jalapeños (for added heat, optional)

Prepare the Biscuits:

    - Preheat your oven to 450°F (230°C).

      - In a large mixing bowl, combine the flour, baking powder, baking soda, and salt.

          - Stir in the shredded cheddar cheese.

                - Using a biscuit cutter or glass, cut out biscuits and place them on a baking sheet lined with parchment paper.

                  - Bake in the preheated oven for 12-15 minutes or until golden brown.

                    Prepare the Chili:

                      - In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
