1 ½ cups all-purpose flour

1 tablespoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 teaspoon black pepper

½ teaspoon smoked paprika

¾ cup buttermilk

2 large eggs

¼ cup olive oil

1 cup shredded cheddar cheese

½ cup diced salami

½ cup diced prosciutto

½ cup diced pepperoni

¼ cup chopped green onions

¼ cup sliced black olives

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease or line a 12-cup muffin tin with paper liners.

    Combine Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, black pepper, and smoked paprika until well combined.

      Mix Wet Ingredients: In another bowl, whisk together the buttermilk, eggs, and olive oil until smooth.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not over-mix; a few lumps are okay.

          Add the Charcuterie: Fold in the shredded cheddar cheese, diced salami, prosciutto, pepperoni, chopped green onions, and sliced black olives until evenly distributed throughout the batter.

            Fill Muffin Cups: Spoon the batter into the prepared muffin tin, filling each cup about ¾ full.

              Bake: Bake in the preheated oven for 18-20 minutes or until the tops are golden brown and a toothpick inserted in the center comes out clean.

                Cool and Serve: Remove from the oven and let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely. Serve warm or at room temperature.
