1 cup bell peppers (red, yellow, and green), sliced

1 cup zucchini, sliced

1 cup carrots, julienned

1 cup cherry tomatoes, halved

1 cup snap peas, trimmed

1 cup broccoli florets

1/2 cup red onion, thinly sliced

1/4 cup Kalamata olives, pitted and sliced

1/4 cup feta cheese, crumbled

2 tablespoons olive oil

2 cloves garlic, minced

1 tablespoon soy sauce

1 tablespoon balsamic vinegar

Salt and pepper, to taste

Fresh basil, for garnish

Instructions
 

Prep the Veggies: Start by washing and prepping all your vegetables. Slice the bell peppers, zucchini, and red onion; julienne the carrots; halve the cherry tomatoes; trim the snap peas; and separate the broccoli into florets.

    Heat the Pan: In a large skillet or wok, heat the olive oil over medium-high heat.

      Cook the Aromatics: Add the minced garlic to the pan and sauté for about 30 seconds or until fragrant.

        Stir-Fry the Vegetables: Add the sliced onions, carrots, bell peppers, zucchini, and broccoli to the skillet. Stir-fry for around 5-7 minutes, or until they are tender-crisp.

          Add Snap Peas and Tomatoes: Toss in the snap peas and cherry tomatoes, continuing to stir-fry for another 2-3 minutes, allowing the tomatoes to soften slightly.

            Season the Dish: Drizzle the soy sauce and balsamic vinegar over the stir-fried veggies. Season with salt and pepper to taste. Stir well to combine all the flavors.
