Caprese Stuffed Chicken with Balsamic Glaze

4 boneless, skinless chicken breasts

1 cup fresh mozzarella cheese, diced

1 cup cherry tomatoes, halved

1/2 cup fresh basil leaves, chopped

2 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional for a kick)

1/2 cup balsamic vinegar

1 tablespoon honey

Prepare the Balsamic Glaze: In a small saucepan over medium heat, add the balsamic vinegar and honey. Bring to a gentle simmer and let it reduce by half, stirring occasionally, until it's thick and syrupy (about 10-15 minutes). Set aside to cool.

    Prep the Chicken: Preheat your oven to 375°F (190°C). While the oven is heating, prepare the chicken breasts. Place a chicken breast between two pieces of plastic wrap or parchment paper and pound it to an even thickness of about 1/2 inch with a meat mallet or rolling pin. Repeat with the remaining chicken breasts.

      Make the Filling: In a bowl, combine the diced mozzarella cheese, halved cherry tomatoes, chopped basil, minced garlic, olive oil, salt, black pepper, and red pepper flakes. Mix everything together until well combined.

        Stuff the Chicken: Lay the pounded chicken breasts flat on a clean surface. Spoon an equal amount of the filling onto one side of each chicken breast. Carefully fold the chicken over to enclose the filling and secure with toothpicks or kitchen twine.

          Sear the Chicken: In an ovenproof skillet over medium-high heat, add a drizzle of olive oil. Once hot, add the stuffed chicken breasts. Sear for about 3-4 minutes on each side until golden brown.

            Bake in the Oven: After searing, transfer the skillet to the preheated oven. Bake for about 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

              Serve: Once done, remove the chicken from the oven and let it rest for a few minutes. Drizzle the balsamic glaze over the stuffed chicken before slicing. Garnish with additional fresh basil if desired.
