Cajun Chicken & Grits Waffle Stacks

4 cups water

1 cup milk

1 cup shredded sharp cheddar cheese

1/2 cup unsalted butter

Salt and pepper, to taste

For the Cajun Chicken:

2 boneless, skinless chicken breasts

2 tablespoons Cajun seasoning

1 tablespoon olive oil

1 tablespoon lemon juice

1 teaspoon garlic powder

Salt and pepper, to taste

For the Waffle Assembly:

1 cup buttermilk pancake mix (store-bought or homemade)

1 cup water

2 tablespoons maple syrup

2 green onions, sliced (for garnish)

Extra cheese (for topping, optional)

Instructions
 

Prepare the Grits:

    - In a large pot, bring 4 cups of water to a boil. Slowly whisk in the stone-ground grits, reduce to a simmer, and cook according to package instructions (usually about 20-25 minutes) until thickened.

      - Stir in the milk, cheddar cheese, and butter. Season with salt and pepper to taste. Keep warm.

        Cook the Cajun Chicken:

          - Preheat your grill or skillet over medium-high heat.

            - In a bowl, combine Cajun seasoning, olive oil, lemon juice, garlic powder, salt, and pepper. Coat the chicken breasts in the mixture.
