Ingredients

4 medium-sized russet potatoes

1/2 cup unsalted butter, melted

4 cloves garlic, minced

2 teaspoons fresh rosemary, chopped

2 teaspoons fresh thyme, chopped

1 teaspoon sea salt

1/2 teaspoon black pepper

1/4 cup grated Parmesan cheese (optional for garnish)

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easier cleanup.

Prepare the Potatoes: Wash and scrub the potatoes thoroughly. Pat them dry. Place each potato between two wooden spoons or chopsticks to prevent slicing all the way through.

Slice the Potatoes: Using a sharp knife, make thin, even slices (about 1/8 inch apart) along the length of each potato, stopping when you reach the wooden spoon edges. This will create a fan-like effect.

Mix the Garlic Herb Butter: In a bowl, combine the melted butter, minced garlic, chopped rosemary, chopped thyme, sea salt, and black pepper. Stir well to integrate all the flavors.

Coat the Potatoes: Using a pastry brush or spoon, generously brush the garlic herb butter mixture over the potatoes, ensuring it gets into the crevices. Reserve some of the butter for basting during roasting.

Roast the Potatoes: Place the prepared potatoes on the lined baking sheet. Roast in the preheated oven for 45-50 minutes, basting with the reserved butter every 15 minutes, until the potatoes are tender and golden brown.

Add Parmesan (Optional): In the last 10 minutes of cooking, sprinkle the grated Parmesan cheese over the tops of the potatoes, allowing it to melt and create a delicious crust.

Garnish and Serve: Remove the potatoes from the oven, and sprinkle with fresh parsley for a pop of color. Serve immediately as a side dish or a delightful main with a salad. Enjoy the buttery, garlicky goodness with every bite!
