Ingredients

8 cups stale brioche or challah bread, cubed

4 cups whole milk

1 cup heavy cream

1 cup granulated sugar

4 large eggs

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

½ teaspoon salt

1 cup pecans, roughly chopped

½ cup caramel sauce (store-bought or homemade)

2 tablespoons unsalted butter, melted (for greasing the baking dish)

Additional caramel sauce for drizzling (optional)

Whipped cream or vanilla ice cream for serving (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish with the melted butter. Set aside.

Prepare the Bread: In a large mixing bowl, combine the cubed brioche or challah bread and chopped pecans. Toss them together gently to combine. Then, place this mixture in the greased baking dish, spreading it evenly across the bottom.

Make the Custard Mixture: In a separate bowl, whisk together the eggs, granulated sugar, milk, heavy cream, vanilla extract, ground cinnamon, and salt until smooth. Make sure all ingredients are well incorporated.

Combine: Pour the custard mixture over the bread and pecans in the baking dish. Use a spatula or your hands to gently press down the bread cubes, ensuring they soak up the custard. Let it sit for about 15 minutes to absorb.

Add Caramel: Drizzle half of the caramel sauce over the top of the soaked bread mixture, ensuring it’s evenly spread. Use a knife or spatula to lightly swirl it into the mixture.

Bake: Place the baking dish in the preheated oven and bake for 45-55 minutes, or until the pudding is set in the center and slightly golden on top. A knife inserted in the center should come out clean or with a few moist crumbs.

Cool Down: Remove the bread pudding from the oven and let it cool for about 10 minutes before serving.

Serve: Drizzle with additional caramel sauce and serve warm with a dollop of whipped cream or a scoop of vanilla ice cream if desired. Enjoy your rich and comforting dessert!
