Buffalo Chicken Stuffed Sweet Potatoes

4 medium sweet potatoes

2 cups cooked chicken, shredded (rotisserie chicken works great)

½ cup buffalo sauce (adjust to taste)

½ cup cream cheese, softened

1 cup shredded cheddar cheese

¼ cup green onions, finely chopped

½ cup plain Greek yogurt (for topping)

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C).

    Bake Sweet Potatoes: Wash the sweet potatoes thoroughly and prick them with a fork several times. Place them on a baking sheet and bake in the preheated oven for 45-60 minutes, or until they are tender and easily pierced with a fork.

      Prepare Buffalo Chicken Filling: In a medium mixing bowl, combine the shredded chicken with buffalo sauce, softened cream cheese, half of the cheddar cheese, green onions, salt, and pepper. Mix until well combined.

        Stuff Sweet Potatoes: Once the sweet potatoes are done baking, remove them from the oven and let them cool for a few minutes. Carefully slice each sweet potato in half lengthwise and gently scoop out a bit of the flesh to create a pocket. Be careful not to scoop too much – you want to keep the structure!

          Mix & Fill: Stir the sweet potato flesh you scooped out into the buffalo chicken mixture until well combined. Then, generously fill each sweet potato half with the buffalo chicken mixture.

            Top with Cheese: Sprinkle the remaining cheddar cheese on top of each stuffed sweet potato.

              Bake Again: Return the stuffed sweet potatoes to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

                Serve: Remove from the oven and let cool slightly. Serve warm, topped with a dollop of Greek yogurt and a sprinkle of fresh parsley or extra green onions for garnish.
