Buffalo Chicken Egg Rolls

Ingredients
  

2 cups cooked chicken, shredded

1/2 cup buffalo sauce (adjust for spice preference)

1/2 cup cream cheese, softened

1 cup shredded cheddar cheese

1/2 cup green onions, sliced

1 package (14 count) egg roll wrappers

Oil for frying (vegetable or canola)

Optional: Blue cheese or ranch dressing for serving

Instructions
 

Prepare the Filling: In a large bowl, combine the shredded chicken, buffalo sauce, cream cheese, cheddar cheese, and green onions. Mix until well combined. Taste and adjust the seasoning or add more buffalo sauce if desired.

    Assemble the Egg Rolls: Lay one egg roll wrapper on a clean surface with one corner pointing towards you. Place about 2-3 tablespoons of the chicken filling in the center. Fold the bottom corner over the filling, then fold the sides in towards the center, and roll away from you to form a tight cylinder. Moisten the top corner with a little water to seal the egg roll.

      Heat the Oil: In a large skillet or deep fryer, heat about 2 inches of oil over medium heat until it reaches 350°F (175°C). To test if the oil is ready, drop a small piece of an egg roll wrapper into the oil; if it sizzles, it's ready.

        Fry the Egg Rolls: Carefully place a few egg rolls in the hot oil, making sure not to overcrowd the pan. Fry for about 3-4 minutes on each side or until golden brown and crispy. Use a slotted spoon to remove the egg rolls and drain on paper towels.

          Serve: Allow the egg rolls to cool slightly before serving. Pair them with your favorite dipping sauce, such as blue cheese or ranch dressing, for a delightful finish.
