Ingredients

2 cups all-purpose flour

1/3 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1/2 cup unsalted butter, cold and cubed

3/4 cup fresh cranberries, chopped (or dried cranberries)

Zest of 1 large orange

1/2 teaspoon vanilla extract

1/2 cup heavy cream, plus extra for brushing

1 large egg

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt. Whisk together until well blended.

Cut in the Butter: Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs.

Add Cranberries and Zest: Gently fold in the chopped cranberries and orange zest, ensuring they are evenly distributed throughout the mixture.

Combine Wet Ingredients: In a separate bowl, whisk together the heavy cream, egg, and vanilla extract until well combined.

Form the Dough: Pour the wet mixture into the dry ingredients. Stir gently with a spatula until the dough just comes together. Be careful not to overmix; it should be slightly sticky.

Shape the Scones: On a lightly floured surface, turn the dough out and shape it into a disk about 1 inch thick. Cut the disk into 8 wedges (like a pizza) or use a biscuit cutter for individual scones.

Prepare for Baking: Transfer the scones to the prepared baking sheet. Brush the tops lightly with extra heavy cream for a lovely golden hue during baking.

Bake: Bake in the preheated oven for about 15-18 minutes or until the scones are golden brown and a toothpick inserted into the center comes out clean.

Cool and Serve: Allow the scones to cool on the baking sheet for 5 minutes before transferring them to a wire rack. Serve warm, drizzled with an optional orange glaze or simply enjoy as is!
