1 can (5 oz) tuna in water, drained

1 cup fresh blueberries, rinsed

1/2 cup celery, finely chopped

1/4 cup red onion, finely chopped

1/4 cup Greek yogurt (or mayonnaise)

1 tablespoon Dijon mustard

1 tablespoon lemon juice

1 teaspoon honey (optional)

2 cups mixed salad greens (arugula, spinach, or your choice)

Salt and pepper to taste

1/4 cup slivered almonds or walnuts (for garnish)

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare the Tuna Mixture: In a medium bowl, combine the drained tuna, chopped celery, and red onion. Mix well.
