Ingredients

2 ripe bananas

1 cup fresh blueberries (or frozen, thawed)

1 cup Greek yogurt (vanilla flavor preferred)

1 tablespoon honey or maple syrup (adjust sweetness as desired)

1 teaspoon lemon juice

A pinch of salt

Instructions

Prepare the Fruit: If using fresh blueberries, rinse them under cool water and remove any stems. Peel the bananas and slice them into smaller pieces for easier blending.

Blend the Mixture: In a blender or food processor, combine the sliced bananas, blueberries, Greek yogurt, honey (or maple syrup), lemon juice, and salt. Blend until the mixture is completely smooth. Stop to scrape down the sides of the blender if necessary.

Taste and Adjust: Taste the mixture and adjust the sweetness if needed by adding more honey/maple syrup. If the mixture is too thick, you can add a tablespoon or two of milk to reach your desired consistency.

Pour into Molds: Carefully pour the blended mixture into popsicle molds, filling them to about ¾ full to allow for expansion.

Insert Sticks: If your molds come with sticks, place them in the center of each mold. If not, you can cover the molds with aluminum foil and then insert wooden sticks through the foil.

Freeze: Place the molds in the freezer and freeze for at least 4-6 hours, or until completely solid.

Remove from Molds: Once frozen, briefly run the molds under warm water to help loosen the popsicles. Gently pull them out of the molds.

Enjoy: Serve immediately or store the popsicles in a zip-lock bag in the freezer for later enjoyment.
