2 lbs pork tenderloin

Salt and pepper, to taste

2 tablespoons olive oil

1 cup fresh blackberries (plus extra for garnish)

1/2 cup balsamic vinegar

1/4 cup honey

2 cloves garlic, minced

1 teaspoon fresh thyme (or 1/2 tsp dried thyme)

1 tablespoon Dijon mustard

1 tablespoon soy sauce (optional for umami)

Preheat Oven: Preheat your oven to 400°F (200°C).

    Season Pork: Pat the pork tenderloin dry with paper towels. Season generously with salt and pepper on all sides.

      Sear Pork: In a large oven-safe skillet, heat olive oil over medium-high heat. Add the pork tenderloin and sear for 3-4 minutes on each side until it's golden brown. Remove from heat.

        Make Glaze: In a small saucepan, combine blackberries, balsamic vinegar, honey, minced garlic, thyme, Dijon mustard, and soy sauce (if using). Heat over medium heat, mashing the blackberries slightly with a fork. Simmer for about 5-7 minutes until the mixture thickens slightly.

          Glaze Pork: Brush the blackberry balsamic glaze generously over the seared pork tenderloin.

            Roast: Transfer the skillet to the preheated oven and roast the pork for 20-25 minutes, or until the internal temperature reaches 145°F (63°C).

              Rest and Slice: Remove the pork from the oven and let it rest for 5-10 minutes before slicing. This helps retain its juices.
