Beef Lettuce Wraps with Mango Glaze

1 lb ground beef (preferably grass-fed)

1 cup diced mango (fresh or frozen)

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon hoisin sauce

1 tablespoon rice vinegar

1 tablespoon sesame oil

3 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 teaspoon chili flakes (adjust to taste)

1 tablespoon lime juice

1/4 cup green onions, finely chopped

Salt and pepper to taste

1 head of butter lettuce (or romaine, for wrapping)

Instructions
 

Prepare the Mango Glaze: In a small saucepan, combine the diced mango, soy sauce, hoisin sauce, rice vinegar, sesame oil, garlic, ginger, and chili flakes. Cook over medium heat, stirring frequently for about 5-7 minutes until the mango has softened and the mixture is slightly thickened. Remove from heat and stir in lime juice. Set aside.

    Cook the Beef: In a large skillet, add the ground beef over medium-high heat. Break it apart with a spatula and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes.

      Combine with Glaze: Once the beef is cooked, pour half of the mango glaze over the beef, stirring to combine. Allow to cook for an additional 2 minutes, so the beef absorbs the flavors. Remove from heat.

        Prepare the Lettuce Wraps: Carefully separate the lettuce leaves, peeling them off as whole as possible. Rinse them under cold water and gently dry with a towel.
