1 can (15 oz) black beans, rinsed and drained

1 medium onion, diced

2 cloves garlic, minced

1 red bell pepper, diced

1 tablespoon olive oil

2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

2 cups cooked brown rice or quinoa

1 cup corn (fresh, frozen, or canned)

1 cup cherry tomatoes, halved

1 avocado, diced

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Shredded cheese (optional)

Sour cream (optional)

Instructions
 

Cook the Beef: In a large skillet, heat olive oil over medium-high heat. Add the diced onion and red bell pepper, cooking for about 5 minutes until softened. Stir in the minced garlic and cook for an additional minute.
