2 medium sweet potatoes, scrubbed and cut into 1-inch cubes

2 tablespoons olive oil

Salt and pepper, to taste

1 cup cooked chicken, shredded (rotisserie chicken works great)

1/2 cup BBQ sauce (your favorite brand or homemade)

1/4 cup red onion, finely diced

1/4 cup cheddar cheese, shredded

2 tablespoons fresh cilantro, chopped (for garnish)

Optional: sour cream or Greek yogurt (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare Sweet Potatoes: In a large bowl, toss the sweet potato cubes with olive oil, salt, and pepper. Spread them evenly on a baking sheet lined with parchment paper.

      Roast Sweet Potatoes: Roast the sweet potatoes in the preheated oven for 25-30 minutes, flipping halfway through, until they are tender and slightly caramelized.

        Combine Chicken and BBQ Sauce: While the sweet potatoes are roasting, mix the shredded chicken with BBQ sauce in a medium bowl until well combined.

          Assemble the Bites: Once the sweet potatoes are done, remove them from the oven and let them cool for a few minutes. Top each sweet potato cube with a spoonful of the BBQ chicken mixture, a sprinkle of diced red onion, and a bit of cheddar cheese.
