BBQ Chicken Lettuce Cups

1 lb boneless, skinless chicken thighs

1 cup BBQ sauce (choose your favorite brand or homemade)

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 head of butter lettuce or romaine lettuce, separated into individual leaves

1 cup shredded carrots

1 cup diced cucumber

½ cup chopped fresh cilantro

¼ cup sliced green onions

Lime wedges (for serving)

Instructions
 

Prep the Chicken: Pat the chicken thighs dry with paper towels. Season them with salt, pepper, garlic powder, and onion powder on both sides.

    Cook the Chicken: Heat the olive oil in a large skillet over medium heat. Add the seasoned chicken thighs and cook for 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C) and the chicken is cooked through.

      Shred the Chicken: Remove the chicken from the skillet and let it rest for a few minutes. Once cooled slightly, shred the chicken using two forks and return it to the skillet.

        Add BBQ Sauce: Pour the BBQ sauce over the shredded chicken in the skillet and stir well to combine. Allow the mixture to heat through for about 2-3 minutes, stirring occasionally.

          Prepare the Lettuce Cups: While the chicken is heating, rinse the lettuce leaves under cold water and pat dry. Lay them on a serving platter.

            Build the Cups: Spoon a generous amount of the BBQ chicken mixture into each lettuce leaf. Top with shredded carrots, diced cucumber, chopped cilantro, and sliced green onions.

              Serve: Serve immediately with lime wedges on the side for squeezing over the top before enjoying.
