Marinating the chicken is a crucial step in creating the Zesty Basil Lime Chicken Skewers. The marinade, composed of fresh basil, lime juice, garlic, and olive oil, works wonders in infusing the chicken with bright, zesty flavors. To begin, cut your boneless, skinless chicken breasts into bite-sized pieces, about 1 to 1.5 inches. This size ensures even cooking and allows the marinade to permeate each piece effectively.

Ingredients

1 lb boneless, skinless chicken breasts, cut into 1-inch cubes

1/4 cup fresh basil leaves, finely chopped

2 limes (zest and juice)

3 tablespoons honey

3 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon red pepper flakes (optional, for a bit of heat)

Wooden or metal skewers (if using wooden skewers, soak in water for 30 minutes before use)

Instructions

Marinate the Chicken: In a large mixing bowl, combine the chopped basil, lime zest, lime juice, honey, olive oil, minced garlic, salt, black pepper, and red pepper flakes (if using). Whisk until well blended.

Add Chicken: Add the chicken cubes to the marinade, making sure to coat all pieces evenly. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes (up to 2 hours for more flavor).

Prepare Skewers: Once marinated, thread the chicken cubes onto the skewers. If using, alternate with bell pepper or onion pieces for added color and flavor.

Preheat Grill: Preheat your grill to medium-high heat (about 375°F to 400°F). If using a grill pan, heat it over medium-high heat on the stovetop.

Grill the Skewers: Place the skewers on the grill. Cook for approximately 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks (internal temperature should reach 165°F).

Serve Hot: Remove the skewers from the grill and let them rest for a few minutes. Serve the chicken skewers with lime wedges and a sprinkle of fresh chopped basil on top for garnish.
