1 medium cucumber, peeled and diced

1 red bell pepper, diced

1 small red onion, finely chopped

2 cloves garlic, minced

4 cups vegetable broth

1/2 cup balsamic vinegar

1/4 cup extra virgin olive oil

1 tablespoon honey or maple syrup (optional, for sweetness)

Salt and pepper, to taste

1 teaspoon dried basil

1 teaspoon dried oregano

Fresh basil leaves, for garnish

In a large pot over medium heat, combine the diced tomatoes, cucumber, red bell pepper, red onion, and minced garlic. Sauté for about 5-7 minutes until the vegetables are slightly softened and fragrant.

    Pour in the vegetable broth and bring the mixture to a gentle boil. Lower the heat to a simmer and add the balsamic vinegar, extra virgin olive oil, honey (if using), salt, pepper, dried basil, and oregano. Stir well.

      Allow the soup to simmer for about 15 minutes to let the flavors meld together. Stir occasionally to prevent sticking.

        After simmering, remove the pot from heat and let it cool slightly. Using an immersion blender, carefully blend the soup until you achieve a smooth texture. If you prefer a chunkier consistency, blend only half of the soup and leave the other half as is.
