Baked Zucchini Tomato Gratin

3 medium zucchinis, thinly sliced

3 medium ripe tomatoes, thinly sliced

1 medium onion, finely chopped

4 cloves garlic, minced

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 cup fresh breadcrumbs

1/4 cup fresh basil, chopped

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1/4 cup olive oil

1 tablespoon balsamic vinegar (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Vegetables: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.

      Layering the Ingredients: In a greased 9x13 inch baking dish, start by layering half of the zucchini slices at the bottom. Season with half the salt and pepper. Next, layer half of the tomato slices on top of the zucchini.

        Add Cheese and Herbs: Sprinkle half of the mozzarella cheese, half the Parmesan cheese, and half the fresh basil over the tomato layer. Repeat the layering process with the remaining zucchini, tomato, mozzarella, Parmesan, oregano, and remaining salt and pepper.

          Add Breadcrumb Topping: In a small bowl, combine the fresh breadcrumbs with the remaining 2 tablespoons of olive oil, balsamic vinegar (if using), and a pinch of salt and pepper. Mix until the breadcrumbs are evenly coated and then sprinkle them over the top of the layered vegetables.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. After 30 minutes, remove the foil and continue to bake for an additional 15-20 minutes, or until the top is golden and the vegetables are tender.

              Cool and Serve: Once finished, remove the dish from the oven and allow it to cool for about 5-10 minutes before serving to set. Garnish with any remaining fresh basil and enjoy your delicious Baked Zucchini Tomato Gratin!
