3 medium zucchinis

1 cup breadcrumbs (preferably panko for extra crunch)

½ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon paprika

½ teaspoon salt

½ teaspoon black pepper

2 large eggs

½ cup all-purpose flour

Cooking spray or olive oil for drizzling

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper. This will keep the fries from sticking and make for easy cleanup!

    Prepare the Zucchini: Wash the zucchinis thoroughly. Cut off the ends and slice each zucchini into long strips, approximately ½ inch thick. Try to keep the size uniform so they cook evenly.

      Set Up The Breading Station: In a shallow bowl, place the flour. In another bowl, beat the eggs until well combined. In a third bowl, mix together breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.

        Coat the Zucchini: Dip each zucchini strip into the flour first, shaking off any excess. Then, dip it into the beaten eggs, allowing any excess to drip off. Finally, roll the zucchini strip in the breadcrumb mixture, pressing gently to ensure it adheres well.

          Arrange on Baking Sheet: Place the breaded zucchini fries on the prepared baking sheet in a single layer, making sure they’re not touching each other. This will help them crisp up nicely.

            Lightly Spray or Drizzle: Lightly spray or drizzle the zucchini fries with olive oil. This helps them achieve a golden-brown color while baking.

              Bake: Bake in the preheated oven for 15-20 minutes, or until the fries are golden brown and crispy. You can flip them halfway through for even cooking if desired.
