Baked Pumpkin Spice Donuts

1 cup pumpkin puree (not pumpkin pie filling)

2 large eggs

1/2 cup granulated sugar

1/4 cup brown sugar, packed

1/2 cup vegetable oil (or melted coconut oil)

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon ground ginger

1/4 teaspoon ground cloves

1/4 teaspoon salt

1/4 teaspoon allspice

Optional: powdered sugar or cinnamon sugar for dusting

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a donut pan with cooking spray or oil to prevent sticking.

    Mix Wet Ingredients: In a large mixing bowl, combine the pumpkin puree, eggs, granulated sugar, brown sugar, vegetable oil, and vanilla extract. Whisk until the mixture is smooth and well-blended.

      Combine Dry Ingredients: In a separate bowl, sift together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, cloves, salt, and allspice. Mix thoroughly to ensure even distribution of the spices and leavening agents.

        Combine Mixtures: Gradually add the dry mixture to the wet mixture, stirring gently until just combined. Be careful not to over-mix; it's okay if there are a few lumps.

          Fill the Pan: Spoon the batter into the prepared donut pan, filling each cavity about 2/3 full. A piping bag or a zip-top bag with a corner snipped off works great for this!

            Bake: Bake in the preheated oven for 12-15 minutes, or until the donuts spring back when lightly pressed and a toothpick inserted into the center comes out clean.

              Cool Down: Allow the donuts to cool in the pan for about 5 minutes, then carefully transfer them to a wire rack to cool completely.
