Ingredients

1 cup canned pumpkin puree

1/2 cup vegetable oil

1/2 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon salt

1 cup semi-sweet chocolate chips

Optional: 1/4 cup chopped walnuts or pecans for added crunch

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it with non-stick spray.

Mix Wet Ingredients: In a large mixing bowl, whisk together the pumpkin puree, vegetable oil, brown sugar, granulated sugar, eggs, and vanilla extract until smooth and well combined.

Combine Dry Ingredients: In another bowl, sift together the all-purpose flour, baking soda, baking powder, ground cinnamon, ground nutmeg, ground ginger, and salt.

Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix.

Add Chocolate Chips: Fold in the semi-sweet chocolate chips and, if desired, the chopped walnuts or pecans for an extra layer of flavor and texture.

Fill Muffin Tin: Evenly distribute the batter into the prepared muffin tin, filling each cup about 3/4 full.

Bake: Place the muffin tin in the preheated oven and bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.

Cool: Once baked, allow the muffins to cool in the tin for about 5 minutes, then transfer them to a wire rack to cool completely.

Serve: Enjoy these delicious muffins warm or at room temperature. They make a delightful breakfast or snack!
