Ingredients

200g block of feta cheese

300g cherry tomatoes (halved)

3 cloves garlic (minced)

300g penne pasta

1/4 cup extra virgin olive oil

1 tsp red pepper flakes (adjust to taste)

1 tsp dried oregano

Salt and pepper to taste

1/2 cup fresh basil leaves (torn)

1/2 cup grated Parmesan cheese

Zest of 1 lemon

Freshly ground black pepper (for serving)

Instructions

Preheat Oven: Preheat your oven to 400°F (200°C).

Prepare Baking Dish: In a large baking dish, combine the halved cherry tomatoes, minced garlic, red pepper flakes, and oregano. Drizzle with olive oil and season with salt and pepper.

Add Feta: Place the block of feta cheese in the center of the tomato mixture. Drizzle with a little more olive oil and sprinkle some additional salt and pepper on top of the feta.

Bake: Transfer the dish to the preheated oven and bake for 25-30 minutes or until the tomatoes are bursting and the feta is golden on top.

Cook Pasta: While the feta and tomatoes bake, cook the penne pasta according to the package instructions until al dente. Drain and set aside.

Combine: Once the feta and tomatoes are out of the oven, use a fork to mash and mix the feta with the tomatoes, creating a creamy sauce. Add the cooked pasta directly into the baking dish and toss well to coat.

Add Fresh Ingredients: Stir in the fresh basil leaves, grated Parmesan, and lemon zest. Mix until evenly distributed. Taste and adjust the seasoning if needed.

Serve: Divide the pasta into bowls, drizzling with a bit of extra olive oil and freshly ground black pepper. Garnish with additional basil if desired.
