Ingredients

6 large eggs

1 cup whole milk

1 cup all-purpose flour

1/2 cup shredded cheddar cheese

1/2 cup cooked chorizo or sausage, crumbled

1 small red bell pepper, finely chopped

1 small jalapeño, seeded and finely chopped

1/4 cup green onions, sliced

1 teaspoon baking powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 teaspoon paprika

Fresh cilantro or parsley for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a muffin tin or line it with muffin liners.

Prepare the Egg Mixture: In a large mixing bowl, whisk together the eggs and whole milk until fully combined.

Combine Dry Ingredients: In another bowl, sift together the flour, baking powder, salt, black pepper, and paprika.

Mix Ingredients: Gradually add the dry ingredients to the egg mixture, stirring gently until just combined. Be careful not to overmix.

Add Fillings: Fold in the shredded cheddar cheese, cooked chorizo or sausage, red bell pepper, jalapeño, and green onions until well distributed throughout the batter.

Fill Muffin Tin: Use a ladle or measuring cup to pour the mixture evenly into the prepared muffin tin, filling each muffin cup about 3/4 full.

Bake the Muffins: Place the muffin tin in the preheated oven and bake for 20-25 minutes or until the muffins are puffed up and lightly golden on top. You can test for doneness by inserting a toothpick into the center; it should come out clean.

Cool and Serve: Once baked, remove the muffins from the oven and let them cool in the tin for 5 minutes. Then transfer them to a wire rack to cool completely. Garnish with fresh cilantro or parsley if desired.

Enjoy: Serve warm for a hearty breakfast or pack them for an on-the-go meal during the week!
