Ingredients

1 lb chicken tenders (skinless and boneless)

1/4 cup lime juice (freshly squeezed)

1 tablespoon lime zest

2 tablespoons olive oil

1 tablespoon honey

2 teaspoons chili powder

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

1/2 teaspoon cumin

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup breadcrumbs (preferably panko for extra crunch)

Fresh cilantro or parsley, for garnish (optional)

Instructions

Preheat the Oven: Start by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray to prevent sticking.

Prepare the Marinade: In a large mixing bowl, combine the lime juice, lime zest, olive oil, and honey. Add the chili powder, garlic powder, onion powder, smoked paprika, cumin, salt, and black pepper. Whisk the ingredients together until well blended.

Marinate the Chicken: Add the chicken tenders to the marinade, ensuring each piece is well-coated. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes to absorb all the flavors (up to 2 hours for more intensity).

Prepare the Breading: On a shallow plate, spread out the breadcrumbs. If you want more flavor, you can toss the breadcrumbs with a pinch of salt and additional chili powder.

Bread the Chicken: Remove the marinated chicken tenders from the fridge. Dredge each tender in the breadcrumbs, pressing lightly to ensure they stick well. Place the breaded tenders on the prepared baking sheet in a single layer.

Bake the Chicken Tenders: Bake in the preheated oven for 15-20 minutes, or until the chicken is cooked through and the breading is golden brown and crispy. You can flip halfway through for even cooking.

Serve: Once baked, remove the chicken from the oven. Let it cool for a few minutes before garnishing with fresh cilantro or parsley if desired. Serve with extra lime wedges for an added zing!
