2 cups rolled oats

2 cups milk (dairy or non-dairy)

1 large apple, peeled, cored, and diced (e.g., Granny Smith or Honeycrisp)

1/3 cup brown sugar (or maple syrup for a healthier option)

1/4 cup unsweetened applesauce

2 large eggs

1 tsp vanilla extract

1 tsp ground cinnamon

1/2 tsp baking powder

1/4 tsp salt

1/2 cup chopped walnuts or pecans (optional)

1/4 cup raisins or dried cranberries (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or spray it with non-stick cooking spray.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, ground cinnamon, baking powder, and salt. Mix well and set aside.

      Combine Wet Ingredients: In another bowl, whisk together the milk, brown sugar (or maple syrup), applesauce, eggs, and vanilla extract until well combined.

        Combine Both Mixtures: Pour the wet mixture into the dry oat mixture. Stir gently until the oats are evenly coated. Fold in the diced apple, walnuts or pecans (if using), and raisins or cranberries (if using).

          Fill the Muffin Tins: Spoon the oatmeal mixture evenly into the prepared muffin tins, filling each cup almost to the top.

            Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the tops are golden brown and a toothpick inserted comes out clean.

              Cool: Once baked, remove the oatmeal cups from the oven and let them cool in the tin for about 5 minutes. Then, transfer them to a wire rack to cool completely.
