Baked Apple Cider Donuts

1 ½ cups apple cider

2 cups all-purpose flour

¾ cup granulated sugar

2 tsp baking powder

½ tsp baking soda

1 tsp ground cinnamon

½ tsp ground nutmeg

¼ tsp ground ginger

½ tsp salt

2 large eggs

½ cup unsweetened applesauce

⅓ cup vegetable oil

1 tsp vanilla extract

For coating: ½ cup melted butter, ½ cup granulated sugar, 2 tsp ground cinnamon

Instructions
 

Reduce the Apple Cider: In a small saucepan over medium heat, bring the apple cider to a boil. Reduce the heat to low and simmer for about 15-20 minutes, or until the cider has reduced to about ¾ cup. Remove from heat and let it cool slightly.

    Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a donut pan with non-stick cooking spray.

      Combine Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt until well combined.

        Mix Wet Ingredients: In a separate bowl, whisk together the eggs, applesauce, vegetable oil, vanilla extract, and the reduced apple cider until the mixture is smooth.

          Combine Wet and Dry Ingredients: Pour the wet ingredients into the dry ingredients. Stir gently until just combined. Be careful not to overmix; a few lumps are okay.

            Fill the Donut Pan: Using a piping bag or a zip-lock bag with a corner snipped, fill each donut cavity about ¾ full with the batter.

              Bake the Donuts: Bake in the preheated oven for 10-12 minutes, or until the donuts spring back when touched and are lightly golden.

                Cool and Coat: Let the donuts cool in the pan for about 5 minutes, then gently remove them and place them on a wire rack. While still warm, dip each donut first into the melted butter and then into the cinnamon sugar mixture (sugar and cinnamon combined).
