Bacon & Potato Breakfast Casserole

8 slices of thick-cut bacon, chopped

4 cups frozen hash browns, thawed

1 cup sharp cheddar cheese, shredded

1/2 cup milk

6 large eggs

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon paprika

Salt and pepper, to taste

1/4 cup green onions, sliced (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish with non-stick spray or butter.

    Cook the Bacon: In a large skillet, cook the chopped bacon over medium heat until crispy, about 5-7 minutes. Once done, transfer the bacon to a lined plate to drain excess grease.

      Layer Hash Browns: In the same skillet, drain excess bacon fat, leaving about 1 tablespoon. Add the thawed hash browns to the skillet, pressing them into an even layer. Cook for 4-5 minutes, until they start to get a light golden crust.

        Combine Eggs and Seasoning: In a mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, paprika, salt, and pepper until well combined.

          Assemble the Casserole: Spread the crisp bacon evenly over the hash browns. Pour the egg mixture over the top, making sure it seeps through the bacon and hash browns. Sprinkle the shredded cheddar cheese evenly on top.

            Bake: Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the eggs are set and the cheese is bubbly and golden.

              Garnish and Serve: Remove from the oven, allow to cool slightly, then sprinkle with sliced green onions. Slice into squares and serve warm.
