2 medium cucumbers, julienned

2 large carrots, julienned

1 red bell pepper, thinly sliced

3 green onions, finely chopped

1/4 cup fresh cilantro, chopped

1/4 cup rice vinegar

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon honey (or maple syrup for a vegan option)

1 tablespoon sesame seeds (optional)

1 teaspoon grated ginger

1 clove garlic, minced

Prepare the Vegetables: Start by washing the cucumbers and carrots thoroughly. Julienne the cucumbers and carrots into matchstick-sized pieces. Thinly slice the red bell pepper and finely chop the green onions. Set all the vegetables aside in a large mixing bowl.
