Ingredients

1 cup all-purpose flour

2 tablespoons sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup buttermilk

1 large egg

2 tablespoons melted butter

1 teaspoon vanilla extract

1 medium apple, peeled and diced (Granny Smith or Honeycrisp work well)

1 teaspoon cinnamon

1/4 teaspoon nutmeg

Caramel sauce (for dipping)

Powdered sugar (for garnish)

Instructions

Prepare the Stir Fry Apple Filling: In a small bowl, toss the diced apple with cinnamon and nutmeg. Set aside.

Make the Pancake Batter: In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt. In a separate bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract until well combined.

Combine Wet and Dry Ingredients: Pour the wet ingredients into the dry ingredients, stirring gently until just combined. Be careful not to overmix; lumps are okay.

Cook the Apples: In a skillet over medium heat, sauté the diced apples for 3-5 minutes until they start to soften. Remove from heat and fold them into the pancake batter.

Cook the Pancakes: Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil. Pour about 1/4 cup of batter for each pancake onto the skillet. Cook for 2-3 minutes on one side until bubbles form on the surface. Flip and cook for an additional 1-2 minutes until golden brown.

Slice into Dippers: Once cooked, remove the pancakes from the skillet, stack, and allow to cool slightly. Using a sharp knife, cut each pancake into strips, about 1-2 inches wide.

Serve: Arrange the pancake dippers on a platter with a small bowl of warm caramel sauce in the center for dipping. Dust with powdered sugar for an added touch of sweetness.

Enjoy: Serve warm and enjoy the delicious fusion of apple pie flavors in your pancake dippers!
