2 cups rolled oats

1 cup almond flour (or whole wheat flour)

1/2 cup unsweetened apple sauce

1/2 cup honey or maple syrup

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon salt

1 cup diced apples (about 2 medium apples)

1/2 cup chopped nuts (such as walnuts or pecans)

1/4 cup raisins or dried cranberries (optional)

Instructions
 

Preheat your oven to 350°F (175°C). Line an 8x8 inch baking dish with parchment paper, allowing some overhang for easy removal.

    In a large mixing bowl, combine the rolled oats and almond flour. Stir in the ground cinnamon and salt until evenly mixed.

      In another bowl, whisk together the apple sauce, honey (or maple syrup), and vanilla extract until smooth.

        Pour the wet ingredients into the dry ingredients and mix until well combined. Fold in the diced apples, chopped nuts, and raisins or cranberries if using.

          Transfer the mixture into the prepared baking dish. Use a spatula to press the mixture firmly and evenly into the pan. This ensures the bars hold together after baking.

            Bake in the preheated oven for 25-30 minutes, or until the edges turn golden brown. Keep an eye on them towards the end to avoid over-baking.

              Once done, remove from the oven and allow to cool in the pan for about 10 minutes. Use the parchment paper overhang to lift the bars out and place them on a wire rack to cool completely.

                Once completely cooled, cut into squares or rectangles. Store in an airtight container at room temperature for up to a week or refrigerate for longer freshness.
