Apple Oat Muffins with Crunchy Topping

For the Muffins:

1 ½ cups rolled oats

1 cup all-purpose flour

1 tsp baking powder

½ tsp baking soda

½ tsp salt

1 tsp cinnamon

½ cup brown sugar, packed

1 large egg

½ cup unsweetened applesauce

½ cup milk (dairy or non-dairy)

1 tsp vanilla extract

1 large apple, peeled, cored, and diced

For the Crunchy Topping:

¼ cup rolled oats

¼ cup brown sugar, packed

2 tbsp all-purpose flour

2 tbsp unsalted butter, melted

½ tsp cinnamon

¼ cup chopped nuts (optional, such as walnuts or pecans)

Instructions
 

Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease with cooking spray.

    Prepare the Muffin Batter: In a large mixing bowl, combine the rolled oats, flour, baking powder, baking soda, salt, and cinnamon. Whisk together until well blended.

      Mix the Wet Ingredients: In a separate bowl, whisk together the brown sugar, egg, applesauce, milk, and vanilla extract until smooth.

        Combine Dry and Wet Ingredients: Pour the wet ingredients into the bowl with the dry ingredients. Stir until just combined. Gently fold in the diced apple, being careful not to overmix.

          Prepare the Crunchy Topping: In a small bowl, mix the rolled oats, brown sugar, flour, melted butter, and cinnamon until crumbly. If using nuts, add them and stir to combine.

            Fill the Muffin Tin: Divide the muffin batter evenly among the prepared muffin cups, filling them about two-thirds full. Sprinkle the crunchy topping generously over each muffin.

              Bake the Muffins: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
