Ingredients

1 ½ cups all-purpose flour

1 teaspoon baking soda

½ teaspoon baking powder

½ teaspoon salt

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg (optional)

½ cup unsalted butter, softened

¾ cup brown sugar, packed

2 large eggs

1 teaspoon vanilla extract

1 cup plain yogurt (Greek or regular)

1 medium apple, peeled, cored, and finely chopped (preferably Granny Smith or Honeycrisp)

½ cup walnuts or pecans, chopped (optional)

¼ cup raisins or dried cranberries (optional)

Extra cinnamon sugar for sprinkling on top (1 tablespoon sugar mixed with ½ teaspoon cinnamon)

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan or line it with parchment paper for easy removal.

Mix the Dry Ingredients: In a medium bowl, combine the flour, baking soda, baking powder, salt, cinnamon, and nutmeg (if using). Whisk together until well blended. Set aside.

Cream the Butter and Sugar: In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy, about 3-5 minutes using an electric mixer on medium speed.

Add the Wet Ingredients: Beat in the eggs one at a time, ensuring each is incorporated before adding the next. Stir in the vanilla extract and yogurt until smooth.

Combine Wet and Dry Ingredients: Gradually add the dry mixture to the wet mixture, mixing gently with a spatula or spoon until just combined (be careful not to overmix).

Fold in Apples and Nuts: Gently fold in the chopped apple, and if desired, the nuts and raisins/cranberries until evenly distributed throughout the batter.

Transfer to Pan: Pour the batter into the prepared loaf pan, spreading it evenly. Sprinkle the cinnamon sugar mixture on top for an extra touch of sweetness and crunch.

Bake: Bake in the preheated oven for 50-60 minutes or until a toothpick inserted into the center comes out clean. If the top is browning too quickly, cover it loosely with aluminum foil during the last 15 minutes of baking.

Cool and Serve: Once baked, remove the loaf from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Slice and serve, enjoying your homemade Apple Cinnamon Yogurt Loaf warm or at room temperature.
