Apple Cinnamon Cheesecake Bars

For the crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

1/4 cup granulated sugar

1 teaspoon cinnamon

For the cheesecake filling:

16 oz (2 packages) cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

2 large eggs

1 teaspoon cinnamon

1 cup sour cream

For the apple topping:

3 medium apples, peeled and thinly sliced (preferably Granny Smith or Honeycrisp)

1 tablespoon lemon juice

1/4 cup brown sugar

1 teaspoon cinnamon

1 tablespoon unsalted butter, melted

Instructions
 

Preheat the Oven: Preheat your oven to 325°F (163°C). Grease a 9x9-inch baking pan or line it with parchment paper.

    Make the Crust: In a medium bowl, combine the graham cracker crumbs, melted butter, granulated sugar, and cinnamon. Mix until well combined. Press this mixture evenly into the bottom of the prepared baking pan. Bake for 10 minutes, then remove from the oven and let cool slightly.

      Prepare the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the granulated sugar and mix until well combined. Mix in the vanilla extract, eggs (one at a time), and cinnamon. Finally, add the sour cream and blend until smooth and creamy.

        Layer the Filling: Pour the cheesecake filling over the pre-baked crust and smooth the top.

          Prepare the Apple Topping: In a bowl, toss the sliced apples with lemon juice, brown sugar, cinnamon, and melted butter until they’re well coated.

            Add Apple Topping: Evenly distribute the apple mixture on top of the cheesecake filling, pressing them down lightly.

              Bake: Bake in the preheated oven for 40-45 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven, crack the door open, and let the cheesecake cool in the oven for about 1 hour.

                Chill: Remove from the oven and let cool to room temperature before refrigerating for at least 4 hours, preferably overnight.

                  Serve: Once chilled, lift the cheesecake out of the pan using the parchment paper, if used. Cut into bars and serve with a sprinkle of cinnamon on top, if desired.
