2 cups sweet corn kernels (fresh or frozen)

1/2 cup breadcrumbs (preferably panko for extra crunch)

1/4 cup grated Parmesan cheese

1/4 cup finely chopped red bell pepper

1/4 cup finely chopped green onion

1/4 cup chopped fresh parsley

1 large egg

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

Cooking spray or olive oil for misting

Prep the Corn: If using fresh corn, remove the kernels from the cob. If using frozen, thaw and drain thoroughly. Pat dry with a paper towel to remove excess moisture.

    Mix Ingredients: In a large mixing bowl, combine the sweet corn, breadcrumbs, Parmesan cheese, red bell pepper, green onion, and parsley. Stir until the ingredients are evenly distributed.

      Add Egg and Seasoning: Crack the egg into the mixture. Add garlic powder, onion powder, paprika, salt, and black pepper. Mix well until everything is combined and holds together. If the mixture feels too wet, add a little more breadcrumbs until the desired consistency is reached.

        Form Patties: With clean hands, shape the mixture into small patties, about 2 inches wide and 1/2 inch thick. You should be able to make around 12 patties.

          Preheat Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes.

            Cook the Patties: Lightly spray the air fryer basket with cooking spray. Place the patties in a single layer, ensuring they are not touching (you may need to do this in batches). Lightly mist the tops with olive oil.

              Air Fry: Cook the patties for 12-15 minutes, flipping them halfway through the cooking time, until they are golden brown and crispy on the outside.

                Serve: Once done, remove the patties from the air fryer and let them cool slightly. Serve warm with your favorite dipping sauce, such as a spicy mayo or avocado dip.
