2 medium zucchinis, sliced into 1/4 inch rounds

1 cup grated Parmesan cheese

1 cup breadcrumbs (panko preferred for extra crunch)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1/2 teaspoon salt

1/2 teaspoon black pepper

2 large eggs, beaten

Olive oil spray or cooking spray

Instructions
 

Prep the Zucchini: Wash and dry the zucchinis. Cut them into uniform 1/4 inch rounds. Ensure the slices are dry to help the coating stick better.

    Make the Coating: In a shallow bowl, mix the Parmesan cheese, breadcrumbs, garlic powder, onion powder, oregano, salt, and pepper until well combined.

      Prepare the Egg Wash: In another shallow bowl, beat the eggs until well combined.

        Coat the Zucchini: Dip each zucchini coin into the egg wash, allowing any excess egg to drip off. Then, roll it in the Parmesan breadcrumb mixture, pressing lightly to ensure a good coating. Place the coated coins on a plate or a baking sheet.

          Preheat the Air Fryer: Set your air fryer to 400°F (200°C) for about 3-5 minutes to preheat.

            Air Fry the Zucchini: Spray the air fryer basket with olive oil spray. Place the zucchini coins in a single layer in the basket; do not overcrowd (work in batches if necessary). Lightly spray the tops of the coins with olive oil spray.

              Cook: Air fry the zucchini coins at 400°F (200°C) for 10-12 minutes, flipping halfway through, until they are golden brown and crispy.

                Serve: Once done, remove from the air fryer and let them cool slightly. Serve hot, garnished with fresh parsley or a squeeze of lemon, if desired.
